As a young man of 18, Chef Enrico Giraldo’s craft was sharpened under the watchful eye of New York’s well known Owner / Chef Carlo De Gegaudenzi of La Camelia.
After ten years of honing his skills with De Gegaudenzi. He went to Italy for formal training at the Culinary School of Bergamo, when he returned back to N.Y. he perused a position as Chef .
After being the Executive Chef of 20 plus years at the well known New York Restaurant Scalinatella , He migrated South to Miami!
Scalina has a menu that has been perfected over his more than 30 years in the industry. He prides himself on serving plenty of Italian specialties, and a variety of fresh whole fish prepared simply in the European style, encrusted in salt, oven baked or grilled with fresh herbs. |
